Artichoke and Hearts of Palm Salad

This is another make-ahead favorite that can be prepared in about 15 minutes.

The flavors are zesty and tangy, and it is an interesting alternative to a green salad.

For a simple meal, you can serve this salad alongside a plate of Italian meats and a loaf of your favorite bread from the bakery. Add some cheeses and you’re good to go!

The recipe as described below serves about 6 people, but I put it out as one of several salads to choose from when I have a larger gathering.

Ingredients

1 – 8 ounce can quartered artichoke hearts (use whatever you can find – with or without marinade is fine)

1 – 7.5 ounce can hearts of palm, drained and cut into slices

2 – 4.5 ounce jars sliced mushrooms, drained

1 red pepper, cut in chunks

1 green pepper, cut in chunks

2 scallions, chopped fine

2 Tablespoons drained capers

3 Tablespoons red wine vinegar

1 teaspoon Italian seasoning (or use 1 teaspoon each fresh oregano, basil, rosemary, chopped fine)

1/2 teaspoon salt

1/2 teaspoon pepper

Directions:

Combine all ingredients in a large bowl or dish. Cover and refrigerate for at least 8 hours, up to 3 days or more. I like to use a glass dish with a glass cover because this dish is very colorful. Sometimes I serve this dish with bottled Italian dressing along side for those who want to add some more kick. Combined with the sides recommended above, it makes a beautiful table.
